5 Simple Meals That Should Be In York Weekly Food Prep

Do you need some cooking inspiration? Are you a family that is extremely busy? Or an athlete that doesn’t have a lot of time? Are you in need of some simple 30 minute meals to make for your family during the week? Well, you have come to the right place! Here are some of my  top 5 simple meals for you to try!

Trader Joe’s Inspired Fall Bowl

  • The ingredients you will need are 5 garlic chicken sausage,1-2 bags of sweet potato gnocchi, 1 bag of brussel sprouts, season with love for salt, pepper, garlic powder, onion powder, olive oil and red pepper flakes. 
  • Set the oven to 375 degrees F. 
  • Slice chicken sausage, wash and cut brussel sprouts, pour all ingredients into a bowl with spices, mix well.
  • Pour onto a baking sheet and cook for 25-30 minutes. Serve and enjoy!
  • Serves 3-4 people.

Boursin Chicken and Orzo

  • The ingredients you will need are Trader Joe’s garlic chicken sausage, 2 cups orzo, 1 cup sundried tomatoes chopped & oil, 1 boursin cheese, 4 cups chicken broth, 2 cups spinach, ½ tsp salt,1  tsp pepper and, 1 tbsp italian seasoning.
  • Set the oven to 425 degrees F.
  • In a dutch oven or baking dish place boursin cheese in the center and orzo around it. Add chicken broth, sun dried tomatoes, cover with foil and bake for 20 minutes.
  • Slice chicken sausage and cook during the last 3-5 minutes of orzo cooking.
  • Add chicken, spinach, salt, pepper, italian seasoning to the baking dish and mix well. 
  • Serves 3-4 people.

Lemon Chicken and Orzo

  • The ingredients you will need are chicken tenderloins, 1 small onion, 2 cloves minced garlic, ½ tbsp olive oil, 1 tbsp butter, ½ tsp paprika, 1 cup orzo, 1 medium zucchini, 2 cups chicken broth, zest and juice of one lemon, ½ tsp thyme, salt and pepper, ½ cup of light cream, ½ cup of mozzarella, ½ cup of feta, and fresh parsley. 
  • Cut chicken into pieces and season with salt, pepper and paprika. Heat pan over medium heat and cook chicken with a little olive oil for 3-4 minutes. Remove chickens and place in a bowl.
  • Melt butter in the same pan. Saute onion for 3-4 minutes then add orzo to toast for 2-3 minutes. Add grated zucchini, garlic and cook for another 2 minutes. Add chicken stock, chicken,  lemon juice & zest. Stir and bake with a lid on for 8-10 minutes until orzo is tender. Stir throughout.
  • Add cream, mozzarella, feta and stir until melted. Top with parsley and enjoy!
  • Serves 3-4 people.

Breakfast Sandwiches

  • The ingredients you will need are 6 eggs, cottage cheese, egg whites, salt, pepper, parmesan cheese, garlic powder, trader joe’s chicken sausage patties, english muffins and cheese.
  • Set the oven to 375 degrees F.
  • Put eggs, 2 scoops of cottage cheese, ½ cup egg whites, season with love for salt, pepper, garlic powder into a blender and mix.
  • Pour mixture onto baking sheet and cook for 25-30 minutes.
  • Assemble breakfast sandwiches with english muffin, chicken sausage, cheese and baked egg. 
  • Wrap in aluminum foil, place in a ziploc bag and store in the fridge or freezer.
  • Microwave in the morning for about 45-60 seconds.
  • Makes about 4-6 sandwiches. 

Breakfast Smoothie

  • The ingredients you will need are a banana, 1 cup strawberries, ½ cup oatmeal, 1 cup coconut water, 1 cup spinach, choice of protein powder, 1 tbsp peanut butter, 1 tbsp flax seeds, and 1 spoonful of greek yogurt.
  • Put ingredients into a blender and blend until smooth.
  • Freeze overnight, store in the fridge or enjoy right away. 
  • Makes 1 smoothie.
