Well fear not fellow over-extender! Kaersten Meitz and I have come up with a solution for your longing Christmas cookie soul. We love cookies probably as much as any other person on da planet times 5 er 6 so we can sorta-kinda label ourselves as cookie experts.
We took a little time this Holiday season to come up with the Most Wonderful Peanut Butter Cookie of the Year….and it doesn’t even have to be baked! No!?, You Gots To Be Kidding Me? Yep, Nope! (Wisconsinites use a lot of Yeps and Nopes in the same sentence, it’s weird but it works).

If you don’t know Kaersten Meitz, let me introduce her. Dats her right dere on da left. She’s a world-class swimmer and a fellow Wisconsin native, from Waukesha (near dat big city of Milwaukee). So I guess dat mean’s she’s pretty good at da swimming thing. She loves Christmas more than anyone I know, besides Santa and Jesus. But, she doesn’t have a lot of time on her hands with all dat extra training she’s putting in for da June 2020. So Kaersten right here can make dis cookie and bring it to all her Holiday parties at da supper club. Everybody will be tinkin she slaved for hours over da stove baking deese cookies. But she won’t tell em “Ope!, nope it only takes about 8 minutes giver take a few.”
So here it is, alls you need are four ingredients and if your oven is on the fritz, because the whatchamacallits broken again, don’t panic, yous don’t even need er today.
ALERT – You’ll wants to screen shot this and save it to your phone when you’re in a cookie baking pickle.

Ingredients:

1 1/2 Cups Natural Peanut Butter (not the Jif or Skippy kind)

1/4 Cup + 2 TBSP Honey or Maple Syrup (a combo is ok)

1/2 Cup Coconut Flour

1 Cup Dark Chocolate Chips

Directions:

1. Line a baking sheet with parchment paper.

2. In a mixing bowl, mix 1 cup peanut butter, honey/maple syrup, and coconut flour

3. Once mixture is well combined, use about 1 1/2 TBSP of dough and roll with hands forming a round ball. Place on lined cookie sheet.

4. Using a fork, press firmly on each cookie two ways creating a hashtag like design on top of each cookie, the cookie should thin out into a more cookie like form.

Tip: use a wet fork to prevent sticking if needed

5. In a medium size microwave safe bowl, add 1/2 cup peanut butter and dark chocolate chips. Microwave on medium heat for 20 seconds. Stir. Continue to heat and stir every 20 seconds until mixture is fully melted and blended. About 2-3 times.

6. Drizzle chocolate/peanut butter mixture over cookies until your heart is content.

7. Store covered or uncovered in freezer on parchment paper. Freeze for at least 1 hour before eating.

8. Devour!

Hot Tip: Now feels free to put as much or little chocolate on yer cookies. Everyone likes em a little different in dere neck-a-da-woods.
GOSH, did you just see what we saw? We made a batch of cookies in about 8 minutes. Now we know da holiday season gets busy but everybodys got an extra 8 minutes. Some of yous spend dat much time sitting at a stop and go light dats green checking yer Facebook feed.
